|This recipe has been around for as long as I can remember,I make it often.....very rich,very moist,very chocolate, and always a surprise when you find out how simple it is to make and what the ingredients are. This is my granddaughters favorite cake.
1 cup salad dressing (Miracle Whip..not lowfat)
1 cup water
2 t. vanilla extract
2 cups flour
1 cup sugar
2 T. baking cocoa ( can up to 2 1/2 - 3 T.)
2 t. baking soda
1/4 t. salt
In a mixing bowl, combine salad dressing, water and vanilla using wisk. Combine the flour, sugar, cocoa, baking soda and salt. Add to salad dressing mixture and beat until mixed. Transfer to a greased and floured 10-in. bundt pan. bake at 350 for 35-40 min. or until a toothpick inserted comes out clean. Cool for 10 min., remove from pan to a wire rack. when cool dust with powdered sugar.
I do have a variation on this cake at times. I use about 3 T. of seedless raspberry preserves, heated til thick syrup ( in microwave 10-15 sec.) I put 1/2 the batter in the pan, spoon the preserves on top, then cover with remaining batter and follow same baking procedures.
I know God will not give me anything I can't handle. I just wish that He didn't trust me so much. ~Mother Teresa
