|Here's a salad that my daughter-in-law and son-in-law often request. It's one that will be on our Thanksgiving table again this year. Enjoy!
Green Pea Salad
1 1/2 head lettuce
2 to 3 stalks celery
2 to 3 bunches green onions
1 can sliced water chestnuts, drained
1/2 jar bacon bits (the real thing is better!)
1 box green peas, thawed, but not cooked
1/4 c. sugar
Chopped green pepper (optional)
Break 1 1/2 heads lettuce into a big bowl. Slice celery, green onions and water chestnuts; chop green pepper. Mix together with green peas and sprinkle mixture over lettuce. Cover everything with mayonnaise (like you're frosting a cake) and sprinkle sugar over top. Cover and refrigerate overnight.
When ready to serve, sprinkle 1/2 jar of bacon bits over mixture, then sprinkle lots of Parmesan cheese over and toss well. I have also added sliced green seedless grapes. YUM!
Note: 5-6 slices of bacon fried out and crumbled make this a much better version and it's what I usually do, but when one is in a hurry the bits do well!
