Here's an easy one that's a favorite of my son-in-law. He loves this with mashed potatoes, a veggie, and cranberry sauce . . . sort of a faux Thanksgiving dinner! I just grill a chicken breast, separately, for myself.
Mom’s Chicken and Dressing Casserole
10-12 boneless skinless chicken breasts
10 oz. Monterey jack cheese
2 cans cream of chicken soup
3/4 pkg. Pepperidge Farm Herb Dressing Mix, crumb style
1 1/2 sticks butter
Place chicken in 9 x 13 inch pan. Sprinkle cheese over chicken. Cover with soup (do not dilute). Top with dry dressing. Melt butter and drizzle over dressing. Cover. Bake at 350° for 1 hour and 20 minutes. | This sounds really good and easy. I think I will try this for a week night dinner really soon. I am out of ideas for week night dinners UG!!!! I am in a bit of a rut in that department. |

Gosh Inky I was so busy last night with the kids at gym and choir I didn't have time to cook I ordered out instead Tonight however this is what I am making, I have already bought everything and today I will pick up the right cheese!! I will let you know stay tuned!!  |

I will be honest with you not only did life intrude in my plans but my fatigue and laziness yesterday played a role as well But to night I am up for the challenge - no activities planned except home and dinner! |

Um, Inky...this sounds even do-able for me. But this isn't one of those good for you dishes is it?
