A friend of mine gave me this recipe several years ago, and she's right. It makes a great side dish on a buffet. I don't know that I'd serve it with ham, but I have served it often with beef, pork, or turkey. Usually, I'll prepare it the night before, through step 3. Then, next day, all you have to do is pop it in the oven. (The note at the bottom is hers.) Enjoy!

Mushroom Buffet Casserole

1 lb. mushrooms
Butter or margarine
8 slices white bread
1/2 c. chopped onion
1/2 c. celery, chopped
1/2 c. chopped green pepper
1/2 c. mayonnaise
3/4 t. salt
1/4 t. pepper
2 eggs, slightly beaten
1 1/2 c. milk
1 can mushroom soup
1/2 c. shredded Cheddar cheese

1. Slice mushrooms and sauté in about 4 tablespoons butter until most of liquid is absorbed. Butter bread slices, cut 3 into 1-inch squares and place in bottom of greased shallow casserole.

2. Combine mushrooms, onions, celery, green pepper, mayonnaise, salt and pepper. Turn 1/2 of mixture into casserole. Cut 3 more bread slices into squares and place on top of mushrooms. Top with remaining mushrooms.

3. Combine eggs and milk and pour into casserole. Refrigerate at least 1 hour, or longer.

4. Pour soup over casserole, then dice remaining 2 bread slices and place on top of soup. Bake at 350 degrees for 30 or 40 minutes. Remove from oven and sprinkle cheese over top of casserole and bake approx. 10 minutes longer just to melt cheese, being careful not to brown the cheese. Makes 8++ servings.

This is a great side dish to have when serving a crowd, as it is a wonderful fill-in dish!
