Here's another of my strange-sounding recipes that is actually quite delicious, especially with ham. The first time I had it was at a carry-in lunch at work. I had never seen anything like it before, but it was so good, I had to ask for the recipe. And, here it is . . . Must be a southern Ohio thing.

Pineapple Casserole

40 oz. pineapple chunks
1/2 c. sugar
2 T. flour
1 c. shredded cheddar cheese
1/4 c. melted butter
1/2 c. cracker crumbs

Drain pineapple and reserve 3 T. of juice. Combine sugar and flour. Add reserved pineapple juice, cheese, and pineapple, mixing well. Spoon into casserole and top with melted butter and cracker crumbs. Bake, uncovered, at 350 degrees for 20 to 30 minutes, until crumbs are brown. Serves 6. NOTE: Wonderful with ham!

We always have ham for Christmas...I'll have to meke this at Christmas...sounds delicious inky..I love pineapple.

We do to Char. I am going to do this, it's sound weird but Pinapple is good with ham.

That was my first thought when someone said they were bringing a pineapple casserole to work. How strange! It actually does work, though, especially as a side to ham.

I wish I had seen this before Christmas I made a Turkey and a Ham. I always serve Pineapple with the ham. I will definately try it at Easter.

I made the pineapple casserole too...very easy and quick dish to make and everyone liked it...Even the cheese haters..yep I have two of those, can you believe that there are people that don't like cheese..lol
I didn't tell anyone that it had cheese in it and for some reason they didn't recognize it did.

Yeah, I have one of those at my house, too, Char. My daughter-in-law isn't really a cheese hater; she's more of a cheese disliker. But, we're assimilating her. Eventually, I'm sure she'll grow to love cheese, too. Very Happy

Actually, no, Tru. I've always used either saltines or Ritz. I'll bet graham crackers would be good, though. I'll have to try that next time.
