Can you tell I am organizing my recipe's today! Here is one I got from one of my girls teachers. Its really tasty and something different to do with potatoes. Yup its Kid friendly Laughing

Half bag of potatoes (peeled and sliced into fairly thick pieces)
1 pound of bacon (chopped into small pieces)
2 onions (chopped finely)
half block of cheddar cheese
1 tray of sliced mushrooms (you can leave these out if you like)

Fry bacon and onion until lightly browned. Layer a casserole dish with a portion of the potatoes (I used Pam to avoid sticking). Sprinkle the bacon/onion mixture over top of your first layer of potatoes followed by a layer of mushrooms and cheddar cheese. Repeat layers.
Bake covered at 350 degrees for approximately one hour or until potatoes are soft.

I would say a 5lb bag is plenty. I always guestimate depending on the size of pan I am using. I hope that helps Lori. Very Happy
