Sydney2 Unrepentant FAMEWHORE

This is one of my families favourte desserts.
475 grams mascarpone cheese
3 eggs
6 tablespoons sugar
1 package of savoiardi biscuits (lady fingers)
500 ml. warm espresso coffee
bitter cocoa powder
1. Prepare coffee let cool.
2. Separate egg yolks from white. Beat egg white until fluffy. While gradually adding the sugar, beat egg yolks until very stiff and egg yolks appear pale in colour. Add mascarpone cheese and fold gently. Fold egg whites gently into macarpone mixtures.
3. OPTIONAL - add liquer of your choice (Sambuca, Grand Marnier, Marsala) to coffee. Dip biscuits in coffee/liqueur mixture. Place biscuits covering bottom of baking dish. Cover with mascarpone mixture. Repeat layers of biscuits and mascarpone mixture.
4. Sprinkle cocao or grated chocolate on top. Refrigerate at least 4 hours before serving. Note. Tiramisu may be frozen and should be defrosted in the refrigerator for at least 8 hours before serving.
